Since 2000, Dos has been and will always be a business that serves our community by:

  • Providing a gathering place for friends, volunteers, families, & workers.

  • Serving healthy, homemade international cuisine and delicious coffee drinks, fast! 

  • Providing a year-round living and haven for our employees.

  • Supporting hundreds of non-profits that serve our valley and world.

In the spring of 2000, we challenged ourselves to create a menu and atmosphere that would appeal to the hippies, cowboys, young families, artists, yuppies, athletes, ranchers, musicians and regular working joes…something for everyone!

Our flavors go way beyond Mexico and transport our well-traveled customers to places like Morocco, Greece, Italy and Thailand. We created a counter-service model (essentially based on that of a fast-food restaurant) that made healthy food from scratch while you watch and was not limited in any way by the corporate limitations of a chain or franchise.

DOS was our first “baby” before embarking on the life-long adventure of actual parenthood! Since 11/11/00, we continue to be grateful for every year we do business in this amazing community!

In the year 2000, we set out to fill a niche in Carbondale and create a business that serves our community by providing a gathering place for friends, families, workers and volunteers and supporting hundreds of non-profits that serve our valley and world. We also, as it happens, built a cafe that serves gourmet international cuisine at a fast-food pace. We went door-to-door to every home in town explained our mission: to serve you and support the causes and organizations that we think will help our community thrive.

Yvon Chouinard, founder of Patagonia, has always been an inspiration to us. He has been quoted as saying "If you focus on the goal and not the process, you inevitably compromise...profit is what happens when you do everything else right.”. Since 2000, we have focused on the process and most importantly the people. In the last 14 years, we have had three empolyees celebrate 10 years with us and many more celebrate at least 5. If our employees continue to feel like family, then we hope our customers will too. We are grateful to be experiencing unprecedented growth in the last few years and every month of 2018 was an all-time record for sales by a large margin.

In 2008, Yvon did a book signing at Dos during the inaugural 5pt Film Festival. While Nelson was taking his burrito order, he asked him what the secret was to Patagonia’s success, hoping we had been on the right track …he said “I’m not in business to make money, I’m in business to change the business model.” 

And so, we stay the course.
